Kheer (Indian Rice Pudding)

Step-by-step Kheer (Indian Rice Pudding) recipe made with Mom Masale ingredients for authentic Indian flavour.

Ingredients

  • 1 packet (approximately 4 tbsp) Mom Masale Kheer Premix
  • 1 litre Full-Cream Milk
  • Chopped almonds
  • Chopped pistachios
  • Saffron strands (optional)

Method

  1. Pour 1 litre of full-cream milk into a heavy-bottomed saucepan or kadai.
  2. Bring the milk to a full boil over medium-high heat.
  3. Reduce the heat to low.
  4. Gradually add the Mom Masale Kheer Premix, stirring continuously to prevent lumps from forming.
  5. Cook over low to medium heat for 12–15 minutes, stirring frequently to prevent the kheer from sticking to the bottom of the pan.
  6. Continue cooking until the rice is fully cooked and the kheer becomes rich and creamy.
  7. Keep in mind that the kheer will thicken further as it cools, so avoid over-reducing it.
  8. Remove from the heat.
  9. Serve warm, or chill in the refrigerator for 1–2 hours before serving.
  10. Garnish with chopped almonds or pistachios, if desired.
